For sushi, it's all about the fish, and the fish must be the best quality you can buy, and it must be fresh. We buy our fish from five different fishmongers, each specializing in specific fish from specific parts of the world. We get our fish from Japan, China, Asia, Spain, South America, and of course the U.S. Our suppliers ship the fish daily via overnight air cargo. The fish is delivered into San Francisco around 4:00 am, and then is delivered by truck to our restaurant no later than 11:00 am the same morning.
Approximately 60% of our fish comes from Japan and Asia, 30% from the United States, and 10% from Europe and South American. One reason we buy so much from Japan and Asia is that it is farm raised, and the quality is superior and very consistent. We pick each vendor based on the quality of the fish the sell, and the source of the fish stock (which helps ensure quality and consistency). For example, we get our Yellow Tail Tuna from Japan, Fatty Tuna from Spain, Octopus and Fresh Water Eel from China, and our Sea Urchin from a supplier in Los Angeles that actually dives for his own Sea Urchin, and does all the processing himself to make sure it is handled and packed properly to ensure freshness and quality.
By the way, we order our fish every night, and only what we'll prepare and serve the next day. The fish we buy today is delivered, prepared and served in our restaurants tomorrow…all of it.
We have yet to find any place better than Taka's. I have turned many to this restaurant that thought they knew the "best". Taka's is clean and comforting. You can do in all attire. I can always go in knowing I am going to have some great food along with some great laughs and conversations. Simply the best all around.
